The baked kidney pudding that I suggest you cook is slightly different from the classic recipe, but the result exceeds expectations. We will not be cooking pudding for several hours in a pot of water, since with the help of the oven this dish can be obtained much faster. Yes, and the kidneys do not need to be cooked for several hours, after soaking them for a day - leave these prejudices to our grandmothers. But do not be lazy to melt the kidney fat, the classic British pudding can be prepared only with it, because without the kidney fat the dough will be completely different.
You can add mushrooms, pieces of fried beef to the pudding, or, as in old British recipes, enrich its taste with several oysters. You can cook white mushroom sauce on beef broth and pour them ready-made pudding.

Kidney Pudding Ingredients
- 1 kg of beef kidneys;
- 2 red onions;
- 3 tablespoons finely chopped parsley;
- 2 eggs;
- 30 g of wheat flour;
- 1 tablespoon of corn starch;
- 150 ml of milk.
A method of making kidney pudding
One fairly large beef kidney weighs about a kilogram. We wash the kidney with running water. Put in a pot with fresh, cold water. We periodically change water. Soak for 2 hours.
Soaked kidneys are divided into segments. In the middle of the kidney, you will find quite large deposits of kidney fat and ducts. Fat must be carefully cut, it will come in handy. You can, of course, instead of renal fat prepare a pudding with butter, but the taste will not be the same.
Cut the kidney fat into small cubes, put in a greased stewpan. We make fat on the smallest fire. It will turn out about 60-70 grams of pure fat, which, when cooled, will come in handy for the test.
We put the kidneys divided into segments into cold water, add any spices: garlic, herbs, peppers, bay leaves and salt (important, always cook offal in large quantities of water). We cook the kidneys for 10 minutes, after boiling, and then we discard them in a colander and rinse with cold water. Filter the kidney fat to remove the greaves. So, ready-to-cook foods for our pudding.
In a tablespoon of kidney fat, fry red onion, cut the kidneys into small slices. We spread the kidney, onion and parsley in a greased kidney shape.
Cooking the dough. Mix two raw eggs and the remaining kidney fat, add flour, salt, starch and milk. The dough will turn out quite liquid, mix it thoroughly so that small lumps disappear.
Fill the kidneys with batter. We make sure that the form is not filled to the brim, as the pudding rises in the oven and can "get out of the banks."
Preheat the oven to 160 degrees and bake pudding with kidneys for about 20-25 minutes on the middle shelf.
Ready kidney pudding can be eaten hot, but it is very tasty and cold. If the pudding is completely cooled, then it can be cut into neat portions.
