So, to cook a salad of vegetables with meat "Rainbow" vegetables, except potatoes, onions and fresh herbs, boil in their skins. Then grind, put on the bowls. We take large flat plates according to the number of guests and serve colorful portions for each guest, do not forget about the sauce. For it, you will need small containers - portioned saucers, in extreme cases, small piles or bowls are suitable.

- 250 g of boiled chicken;
- 300 g of potatoes;
- 100 g carrots;
- 100 g beets;
- 60 g of white onion;

- 30 ml of olive oil;
- 20 g butter;
- 20 ml apple cider vinegar;
- 15 g of sugar;

A method of preparing a salad of vegetables with meat "Rainbow"
We start with potatoes. We clean, cut into small cubes, put in cold water, rinse and wash off the starch. Then we put the potatoes in a colander, when the water drains, put it on a towel.
In a pan, heat the olive oil or odorless vegetable oil, add the cream. Throw chopped potatoes into the heated oil, fry until tender, salt in the end, sprinkle with caraway seeds.
Spread on a plate a portion of fried potatoes.
Next, pour mayonnaise into the sauceboat and put in the center of the plate, around it we will form a vegetable rainbow.
The carrots, cooked in their skins, are rubbed on a coarse grater, salt to taste, put next to the potatoes.
White sweet onion, it is often called salad, cut into thin half rings. Put the onions in a bowl, add sugar, vinegar and a little salt, grind with your hands, leave for a few minutes. Then spread next to the carrots, sprinkle with ground red pepper.
Thoroughly wash the lettuce in a bowl with cold water, dry it in a dryer or on a paper towel, cut into strips. We chop a bunch of fresh herbs finely, mix the salad with herbs, pour olive oil, spread next to the onion.
We cut boiled chicken - remove the meat from the bones, remove the skin. We sort the meat into fibers, put it next to the greens.
Cook the beets in their skins, cool in cold water, clean, grate on a coarse grater. Season the beets with a drop of vinegar, a pinch of salt and a teaspoon of quality olive oil. We put beets between meat and potatoes. Immediately serve a salad of vegetables with Rainbow meat to the table.
