For homemade spicy sauce "Chili with Cherry" you need a few pods of red hot pepper and seasoning. Before adding pepper to the sauce, be sure to try it so as not to overdo it with a spicy taste. - 300 g of cherry tomatoes;
- 4 pods of red hot chili peppers;
- 4 medium-sized onions;
- 1-2 heads of garlic;
- 1 tsp turmeric
- 1 tsp curry;
- 2 tsp sweet paprika flakes;
- 1 tsp hot red pepper;
- olive oil, salt, sugar.
The method of preparation of hot sauce "Chili with cherry"
Start to do. We chop the onions and garlic cloves at random, add a teaspoon of salt so that the juice begins to stand out from the vegetables. In a wide-bottomed stewpan, heat about 5 tablespoons of olive oil for frying, add onions and garlic, simmer, cover with a lid, until the onions become soft.
While preparing the onions, we’ll do some cherry and chili. With tomatoes, everything is simple, cut in half, removing the stem. I advise you to chop hot pepper in medical gloves in order to do without consequences, since an eye or nose accidentally rubbed by a hand in pepper will make itself felt for a long time. We remove seeds and a membrane from pepper, chop finely, add to the cherry along with sugar. The amount of sugar depends on your taste preferences and the acid of the tomatoes, usually I add 3-4 tablespoons.
Add the cherry and chili to the softened onion, then sprinkle with spices. We put ground turmeric, cereal sweet paprika and Indian curry vegetable seasoning. Close the stewpan with a lid, cook the sauce on low heat for about 30 minutes, the vegetables should be almost completely boiled.
When the finished sauce cools down a bit, grind it with a hand blender, taste it, add sugar and salt if necessary.
This sauce is stored well because of the high content of hot pepper, which, as you know, is an excellent preservative. But I advise, just in case, to put it in sterile and dry jars and pasteurize (at a temperature of about 80 degrees) for about 10 minutes, this guarantees reliable storage of the workpiece.
Cooled sauce can be served immediately with meat or poultry; its fiery taste should appeal to real men.
